I think being a vegetarian is the healthiest and most ethical diet of all, and all you vegetarians have created such great recipes for the rest of us, it's easier than ever these days. Add onion, bell pepper, carrot, rice and lentils; cook and stir 3 to 4 minutes or until vegetables are crisp-tender. Stir in remaining ingredients. Bring to a boil.
