Meatless Monday recipes

Meatless Monday is a nonprofit initiative aimed at encouraging people to give up meat one day a week. Going meatless, even just on Mondays, is better for your health and better for the environment. If you need inspiration, go to the Meatless Monday website for all kinds of great recipes.

I also like to bring you my readers' suggestions whenever I can. Here are two ideas for easy meatless meals:

First, Alea at Premeditated Leftovers suggested Swiss Chard and Garbanzo Bean Soup from the blog Dandelionheart. Alea says it's her favorite kind of recipe because it's flexible and it comes together fast. That's my favorite kind too, plus it sounds delicious. As a matter of fact, I've got some swiss chard I need to use up and this is a healthier recipe than the Guadalajaran Swiss Chard Quesadillas I was planning on. I'll let you know if I try it tonight.

Coupon Challenged says that even though her kids are true carnivores, they've been eating meatless meals at least once a week for years. Some of their favorites are guacamole or potato tacos, and veggie lasagna and veggie soups in the winter. I'm a big fan of vegetarian tacos, and when you have delicious ingredients like guacamole or potatoes, or beans, tomatoes, cheese, and salsa, why would you even want the meat?

I have a garden full of potatoes and had not even thought about them as a taco or burrito filling! A burrito wraper is a lot like an Indian chapati. I could stir fry potatoes, onions and add a bit of curry and have knock off Indian food!

I am making the Guadalajaran Swiss Chard Quesadillas tomorrow for dinner. I had to wait until I could pick up some tequila. My husband does not keep it in the house since I used it to preserve a recently dead horseshoe crab that my kids found on the beach after a huricane. He looked at me aghast and said, "what were you thinking?" I told him I thought it would be a good preservative since the worm seems to stay in pretty good shape. He declared my actions alcohol abuse. In my defense, the horseshoe crab is still in great shape after 6 years of resting in tequila.

Tammy- A taco shop nearby sells potato tacos, and they're the best of all in my opinion. It's all about the freshness and the seasoning. I love your idea and I'm going to try it!

Alea- We're having them tonight too! I can't resist them, I don't know if I'll ever be able to use chard in any other way again. Yes, your use of tequila is hilarious and certainly creative.

I love Spanish potato tortillas - that's what the Spaniards call it, even though we, Americans, would probably call it a giant potato omelet or frittata. It's just potatoes, onions and eggs. That's it. I serve it at room temperature sliced with a salad and my family goes crazy for it. You can google the recipe - it's all over the internet. :0 (P.S. Love the blog - just found it and have been reading non-stop!)
