Auntie Em's Delivery - Recipes

Auntie Em's Delivery - Recipes: "Recipes & Ideas:Oven Roasted Cherry Tomatoes"

This is a loose recipe. So you can play around with different herbs.

1-pint cherry tomatoes
2 tbs olive oil
4 cloves garlic, minced
1 tsp sea salt
1 tsp pepper
2 tbs fresh chopped thyme
1. Pre heat oven to 300 degrees.
2. Cut tomatoes in half and put them skin side down on a baking sheet. Drizzle with olive oil, minced garlic and sprinkle with salt and pepper and thyme.
3. Roast until they are wilted and shriveled looking. About 2 ½ hours.

Ten Tomato Ideas (besides the obvious sauces):
1.Tomato Frittata
2.Scramble them into eggs
3.Spread olive tampanade and ricotta cheese onto toasted baguette and top with tomato slices and olive oil
4. Slice onto pizza
5. Dice and sprinkle on top of creamy polenta then drizzle with olive oil and basil
6. Make fresh Bloody Marys
7. Roast cherry tomatoes to top fish.
8. Make a tomato and corn salsa and top grilled skirt steak
9. Make a tomato chutney
10. Make Chow Chow

Okay, who knows what Chow Chow is? I've never heard of it. Please let me know in the Comments section.

chow chow is a pa dutch cold mixed bean/vegetable salad...usually with sugar and vinegar

Thank you for sharing your CSA recipes. I have found some real keepers. This recipe is particularly timely, since I am being swamped with cherry tomatoes right now.

I was also inspired by the idea of sharing a recipe when I share food from my gardenwith my friends. I now print out a recipe of two for each vegetable that I bring.

Alea- I love the idea of bringing a recipe with you! And I'm glad you've enjoyed some of the recipes that come with our CSA. I'm going to try this one because we've been getting a lot of cherry tomatoes and I also have two plants. And that parmesan tomato tart we've had twice, I think I would eat it every week if it wasn't packed with butter and cheese.

I am making these today and am very excited to try them!! A quick question though...how do you store them and how long have you found them to last? I have A LOT of cherry tomatoes, but I don't want to end up having to take a picture of these wonderful roasted beauties for food waste Friday.

Hi Amanda- I just made them the other night for the first time so as to avoid wasting some cherry tomatoes. I didn't even use the garlic (which would be good) just cut in half and sprinkled with salt and pepper and fresh thyme. They were delicious- I ate several and then put the rest aside for lunch the next day. I think you could safely keep them in the fridge for a few days.

Well, I don't know what I did wrong...I just popped my head in to look at them (they had only been in the oven for 1 hour) and a good portion of the tomatoes and garlic are burnt :( Any thoughts as to what I should have done differently? I followed the recipe just as written...

Amanda- Oh my goodness, I just noticed that the recipe called for 2 1/2 hours! That's a long time! I wonder if that's supposed to make them like sun-dried tomatoes, all shriveled up? I just ate mine roasted, took them out after maybe 25 or 30 minutes. I'm sorry yours burned. I wouldn't think they would at such a low temp, but I've never tried the recipe that way. Sorry! I just always post the recipe that comes with our CSA because they sound so good, I've tried most of them but not all.
